Artichokes are commonly found throughout Greece and when they’re in season, cooks all over the country prepare the in delicious ways. These grilled baby artichokes are especially popular, especially on Greek islands such as Kythera.

Greek Style Grilled Artichokes (Aginares sta Karvouna) Recipe Ingredients:

  • 1 1/2 quarts cold water
  • 2 lemons, juiced
  • 12 baby artichokes
  • 1/2 cup Greek olive oil
  • Salt and Pepper, to taste
  • Soaked bamboo skewers

How to Prepare Greek Grilled Artichokes:

Add the water and lemon juice to a large bowl and set it aside.

To prepare the artichokes, start by cutting off the stems, leaving about one-inch. If the artichoke doesn’t have stems, don’t worry about it. Take off the top row of the leaves of each of the artichokes. Rub each artichoke with the halved lemons as you work to prevent them from turning brown.

Cut the artichokes in half and then rub the insides with the lemons. Using a spoon or paring knife, remove the inner, hairy choke from each of the halves. Submerge each of the artichoke halves in the lemon water and soak them for about thirty minutes.

Spear each of the halves with a bamboo skewer. You should be able to fit 2-3 baby artichokes on each skewer. Pat them dry with paper towels and then brush each artichoke on all sides generously with olive oil. Preheat the grill and then cook each artichoke for 3-4 minutes on each side. Remove from grill and sprinkle with salt and pepper, to taste.
