This traditional spaghetti dish is especially common in the Greek region of Mani. It calls for Myzithra cheese but if you don’t have access to this cheese, substitute it for Romano cheese. This recipe makes four servings.

Greek Style Spaghetti With Fried Eggs (from Mani) Recipe Instructions:

  • 1 pound spaghetti (choose gluten-free macaroni if following a gluten-free diet)
  • 4 Greek style fried eggs
  • 1 cup olive oil
  • 1 cup grated Myzithra or Romano cheese

How to Make Greek Style Spaghetti with Fried Eggs:

Bring a large pot of water to a boil and add the spaghetti. Cook according to the package instructions.

Prepare the eggs according to the instructions in this recipe.

When the spaghetti is cooked, drain it through a strainer and place the spaghetti in a serving bowl.

Toss the spaghetti with the olive oil and then the Myzithra cheese.

After the spaghetti is served into each of the four plates, top each plate with one of the fried eggs.
