Snails are plentiful throughout Greece, and there are periods in the country’s history, such as during World War II, when the snails helped prevention starvation. Times are different now, but snails are still considered to be a tasty treat.

Greek Style Snails in Vinegar (Salingaria me Xsithii) Recipe Ingredients:

  • 2 tablespoons coarse salt
  • 24 cleaned snails, boiled for 2 minutes and cleaned
  • 2 tablespoons Greek olive oil
  • Water, for boiling
  • 1/2 cup vinegar
  • 3 tablespoons fresh, chopped parsley

Directions on How to Prepare Greek Style Snails in Vinegar:

Sprinkle the salt into a plate. Press the rim of each of the snails into the plate and set them aside.

Drizzle the olive oil into a large skillet and set the heat to medium. Lay the snails in a single layer in the pan. Heat the snails all the way though. You’ll want to roll them around in the skillet with a spoon.

Pour water into the pan so that they cover the snails. Cook the water and snails together until the water evaporates. This should take about 12 minutes.

Add the vinegar. Heat for another 5 minutes, or until the vinegar is reduced by half. Place snails on a serving platter and sprinkle with fresh, chopped parsley.
