Saganaki is a Greek dish that is actually named after the traditional pan that is used. If you don’t have one, you can always improvise. This recipe uses shrimp or prawns, which are common in Greece.
Greek Saganaki Cheese With Shrimp (Garides Saganaki) Recipe Ingredients:
- 2 tablespoons Greek olive oil
- 1/2 small shallot, minced
- 2 cloves garlic, minced
- 1 cup drained, diced tomatoes
- 1/2 cup white wine
- 1/3 cup vegetable broth (or reserved juice from the diced tomatoes)
- 2 tablespoons Ouzo
- 1 tablespoon chopped, fresh parsley
- 1/2 teaspoon Greek oregano
- 12 medium-sized shrimp, peeled and deveined
- 14 ounce block of feta cheese
- Fresh lemon wedges, for serving
Directions to Make Shrimp Saganaki:
Pour the olive oil into a skillet and set the heat to medium. Add the shallot and saute for a few minutes. Add the garlic and saute for another minute. Add the tomatoes and cook for a few minutes while stirring constantly. Do this until the tomatoes are reduced in size by half. Add the white wine, vegetable broth, ouzo, parsley, oregano, and then arrange shrimp in a single layer. Place the block of feta in the middle of the skillet. Cover and reduce the heat to medium-low. Cook until the shrimp are pink and the feta is warm and gooey. Serve with lemon wedges.
