Greek Style Shrimp Pilaf Recipe Ingredients:
- 3 tablespoons Greek olive oil
- 1 medium onion, chopped
- 1 garlic clove, finely chopped
- 1 tablespoon tomato paste
- 1 pound shrimp (frozen or fresh)
- 1 cup long grain rice
- 2 tablespoons orzo
- 2 cups water
- 3 tablespoons fresh, chopped parsley
Instructions on How to Make Greek Style Shrimp Pilaf:
Pour the olive oil into a large saucepan and set the medium. Let the oil warm for 1-2 minutes.
Add the onions and saute until slightly soft. This should take about 2-3 minutes. Add the garlic and saute for another minute.
Stir in the tomato paste and then add the shrimp. Let the shrimp cook until pink. Stir in the rice and orzo and let it cook for about 2-3 minutes.
Stir in the water. Cover the pot and let the mixture come to a boil. Reduce the heat to low and simmer until all the water is absorbed. Stir in the parsley just before serving.
** This recipe contains olive oil, which isn’t permitted during strict fasting. If you adhere to a strict fast, omit the olive oil and using nonstick cooking spray in a nonstick pan to sauté, instead.
