Versions of this recipe for sautéed mushrooms are served throughout Greece. Feel free to use more or less of these spices, depending on your personal tastes.

Greek Style Sautéed Mushooms Recipe Ingredients:

  • 3 tablespoons Greek olive oil
  • 1/2 teaspoon ground cinnamon
  • 2 bay leaves
  • 1 tablespoon crushed coriander seeds
  • 1 pound small mushrooms, trimmed and cleaned
  • 1 1/2 cups white Greek wine
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoon chopped Greek herbs, such as fresh oregano, thyme, or parsley

How to Make Greek Style Sautéed Mushrooms:

Pour the olive oil into a skillet and set the heat to low. Add the cinnamon, bay leaves, and coriander seeds and warm the spices for about 2 minutes.

Add the mushrooms to the skillet in a single layer and cook over low heat for about five minutes so that most of the moisture from the mushrooms is released. The mushrooms should darken in color, too.

Pour the wine into a medium saucepan and bring to a boil. Simmer the wine until it reduces by about 1/2 cup. Add the mushrooms, salt, and pepper and bring the mushrooms to a boil once again.

Turn off the heat, cover the pan, and let the mushrooms sit on the stovetop for about two hours so that the wine absorbs. Sprinkle with the fresh herbs just before serving.
