For this recipe, you can use any type of sausage you have on hand, but Greek loukaniko is best. This dish is served throughout Greece.
Sausage Recipe Ingredients:
- 1 1/2 pounds Greek sausage, such as loukaniko, cut into 1 inch pieces
- 3 tablespoons Greek olive oil
- 1 large onion, chopped
- 2 garlic cloves, chopped
- 6 bell peppers (any color), chopped
- 1/2 cup dry white wine
- 2 tablespoons tomato paste
- 2 cups canned, diced tomatoes with their juices
- Salt, to taste
- Pepper, to taste
- 1 bay leaf
- 1 teaspoon dried Greek oregano
Directions to Prepare Greek Sausage, Potatoes, and Onions:
Place a deep skillet on a burner and set the heat to medium. Let the pan heat for about a minute and then add the sausage pieces. Sear each piece so that it browns, and then turn the pieces over and sear those sides until they brown. This process should take about 5-6 minutes. Remove the sausage from the skillet and return the skillet to the heat.
Pour the olive oil into the skillet. Add the onion and saute until soft. This should take about 5 minutes. Add the garlic cloves and peppers and saute until the peppers start getting soft. This should take 2-3 minutes.
Mix the tomato paste into the wine and pour into the skillet. Stir in the tomatoes and then add salt, pepper, the bay leaf, and the oregano. Add the sausage back into the pan and cook over medium heat for about ten minutes, and then set the heat to low. Simmer for about ten more minutes until serving.
