Rabbit is a popular meat that is served throughout Greece. This recipe uses rabbit pieces that have been marinated in ladolemono and sprinkled with rosemary just before serving.

Greek Roasted Rabbit With Oil and Lemon Marinade:

  • 1 whole rabbit, cut into pieces
  • 1 recipe ladolemono
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon fresh rosemary leaves

How to Prepare Greek Roasted Rabbit with Oil and Lemon:

Place the cut up rabbit in a single layer in a dish.

Prepare the ladolemono according to the recipe instructions. Pour it over the rabbit pieces.

Cover the dish with plastic wrap and place it in the refrigerator for at least two hours. Overnight is best.

Preheat the oven to 350 degrees Fahrenheit when ready to make the rabbit. Spray a baking dish (9 x 13) with cooking spray or brush with olive oil.

Remove the rabbit from the refrigerator and pat the pieces with paper towels to remove most of the marinade.

Place the rabbit pieces in a single layer in the baking dish. Sprinkle the pieces with salt, pepper, and rosemary.

Place the dish in the oven and bake until cooked all the way through and the skin is crispy. This should take 40-45 minutes.
