Variations of this vibrant, yet simple dish exist throughout Greece. Omit any spices you don’t like using. For example, in some regions of Greece, cinnamon isn’t normally used and other spices, like cumin or allspice, are used instead.
Greek Style Rice Pilaf with Tomato Sauce (Pilafi me Saltsa Domata) Recipe Ingredients:
- 2 tablespoons Greek olive oil
- 1 medium onion, finely chopped
- 1/2 celery stock, finely chopped
- 1 clove garlic, finely choppped
- 1 1/2 cups long grain rice
- 2 cups water
- 1 recipe Greek tomato sauce
- Salt, to taste
- Pepper, to taste
- 1/2 teaspoon ground cinnamon
How to Make Greek Rice Pilaf With Tomato Sauce:
Drizzle the olive oil into a large saucepan and set the heat to medium. Let the olive oil heat for about a minute and then add the celery and onions. Saute until both become soft. This should take about five minutes. Add the garlic and saute an additional minute. Stir the long grain rice and saute for about two minutes.
Stir in the water, tomato sauce (which you’ve prepared in advance) , salt, pepper, and cinnamon. Cover the pan and let the mixture come to a boil. Reduce the heat to a simmer (on low) after the mixture boils. Cook until all the water is absorbed and the rice is soft. This should take 15-20 minutes but keep checking it so the mixture doesn’t burn.
