This recipe tastes best if you’re able to use fresh peas, but you’ll likely need to shell them yourself. If you can’t find shelled peas, frozen peas are a good substitute.

Arakas Kokinistos Recipe Ingredints:

  • 1/3 cup Greek olive oil
  • 1 medium onion, chopped
  • 3 cups fresh or frozen peas
  • 1/3 cup chopped, fresh parsley or dill
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons dried Greek oregano
  • 1/3 cup tomato paste dissolved in 2 cups water
  • 2 additional cups water

Instructions on How to Make Greek Peas in Tomato Sauce:

Pour the olive oil into a large saucepan and set the heat to medium. Add the onion and saute until soft, about five minutes. Stir in the peas and cook for one minute. Add the parsley or dill, salt, pepper, oregano, tomato paste, and the additional two cups water. Stir the mixture well to incorporate all the ingredients. Cover the pan and set the heat to medium-high. Once the mixture boils, reduce it to low. Simmer for 30 minutes or until the peas cook all the way through.
