Recipe for Greek Style Raisin Cake

Homemade vanilla cake with raisins.Greek Style Raisin Cake (Stafithopita) Recipe Ingredients:

  • 4 cups flour
  • 5 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon, ground cloves
  • 1/2 teaspoon salt
  • 1 cup butter
  • 1 1/2 cups sugar
  • 3 beaten eggs
  • 1 1/2 cups milk
  • 2 cups raisins
  • Powdered sugar

How to Bake Raisin Cake:

Preheat oven to 350 Degrees Fahrenheit. Spray a 9 x 13 pan with nonstick cooking spray.

Sift flour, baking powder, cinnamon, cloves, and salt together into a large mixing bowl.

Add the butter and sugar to a medium sized mixing bowl and beat on medium speed with an electric mixer until well combined. Add the eggs one at a time, beating on low speed as you do. Beat for an addition 2 minutes on medium speed until all three ingredients are well mixed.

Beat 2 cups of the dry ingredients into the butter mixture. Add 1/2 cup of milk and beat together on low speed. Add the rest of the dry ingredients and beat on low speed for 1 minute, and then add the rest of the milk and beat again on low speed for 1 minute. Stir in the raisins using a wooden spoon.

Pour the batter into the cake pan and place in the center of the oven. Bake for about 1 hour, or until a toothpick inserted in the center comes out clean. Start checking every 5 minutes starting at the 45 minute point.

Remove from the oven and let cool on the counter for 15 minutes. Loosen the edges of the cake pan with a dull knife and turn over onto a wire cooling rack. Dust with confectioners’ sugar after the cake is completely or just before serving.
