Greek Apple Cake (Milopita) Ingredients:
- 1 3/4 cup self rising flour
- 1 teaspoon baking powder
- 4 medium apples, peeled and cored
- 2 tablespoons lemon juice
- 1 1/2 sticks butter (3/4 cup)
- 1/3 cup brown sugar
- 1 1/2 cups granulated sugar
- 2 teaspoons brandy, such as Metaxa
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 pinch of salt
- 4 large eggs
- 3/4 cup milk
- 1/2 cup raisins
- 1/2 cup coarsely chopped walnuts
How to Prepare Greek Apple Cake:
Preheat the oven to 350 degrees Fahrenheit. Spray the bottom of a large sprinkle form pan with cooking spray, or grease with butter. Both 9 and 10 inch spring form pans will work – a 10-inch pan will result in a thinner cake.
Sift the flour and baking powder together into a large bowl and set aside. Cut each of the apples in half and slice them really thin with a sharp knife. Place the apple slices in a large bowl and drizzle with lemon juice.
Melt half the butter in a saucepan or the microwave and pour directly into the pan. Press the brown sugar into the bottom of the pan. Layer the apple slices on top of the brown sugar in an overlapping layer. Sprinkle the apple slices with the brandy and about half of the ground cinnamon. This step helps caramelize and cook the apples.
Dice the few extra apple slices that are remaining and place them in a small bowl.
Add the butter and granulated sugar to a medium bowl and beat on medium speed with an electric mixer. Add the eggs one at a time and beat as it is well combined. Add the rest of the cinnamon and a pinch of salt and beat well. Slowly beat in the milk until it is completely incorporated.
Set the mixer speed on low and slowly beat in the flour mixture until a thick batter forms. Turn off the mixer and stir in the raisins and walnuts.Place the batter into the pan and smooth the top with a rubber spatula. Sprinkle the batter with the remaining apple pieces.
Place the cake pan in the center of the preheated oven. Bake for about an hour, or until a toothpick inserted in the center comes out clean. Note that it may take more than an hour because cook times vary, but begin checking the cake at the hour point to make sure you don’t overcook it. Let the cake cool in the pan about 15 minutes before transferring it to a serving plate.
