Recipe for Greek Style Mussels in Rice
Greek Style Mussels in Rice (Midia Pilafi) Recipe Ingredients:
Mussels:
- 2 pounds of cleaned muscles
- ½ cup oil (Canola or Mazola if fasting)
- 1 medium onion sliced
- 1 clove of garlic minced
- 1 cup of crushed tomatoes
- 1 tbsp tomato paste
- 2 tsp chopped parsley
- 2 tsp chopped celery
- 1 small hot pepper
- ¼ tsp cayenne pepper
- 1 tsp Worcestershire sauce
- salt and pepper to taste
- ½ cup feta cheese or dairy free feta (optional)
Rice:
- 2 cups rice
- 2.5 cups water
- 1 small cinnamon stick
Directions to Prepare Greek Mussels in Rice:
Rinse and strain the muscles and lay the on a towel or paper towel to dry.
Prepare the rice: In a medium pot melt the butter and add in the rice. Sautee the rice until slightly brown. Add the broth and some salt, cover and cook on low for about 20 minutes until ready.
Prepare the muscles:
Place a pot on high heat. Add the onions and garlic and sautee. Add all the other ingredients (except for the mussels and cheese) and let slow boil for about 15-20 minutes until the sauce thickens. Add the mussels an cheese(optional) and cook for 5 minutes, stirring a couple of times. Remove the muscles from the fire and mix in with the rice.
** This recipe contains olive oil, so if adhering to a strict fast omit the oil and use nonstick cooking spray instead.
