These merengue cookies aren’t as commonly known as desserts like baklava, but they can still be found throughout Greek!
Greek Meringue Cookie (Pezedes) Recipe Ingredients:
- 2 cups granulated sugar
- 1/2 cup water
- 1 teaspoon lemon juice
- 4 egg whites
- 1 teaspoon vanilla
- 1 cup confectioners’ sugar
Instructions for How to Prepare Greek Merengue Cookies:
Preheat oven to 350 degrees Fahrenheit.
Add the granulated sugar, water, and lemon juice to a saucepan. Set the heat on medium and leave the pot uncovered. Stirring constantly, bring the mixture to a boil. Keep stirring and cooking the mixture until a thick syrup forms. Remove from heat and set aside.
In a medium bow, add the egg whites and beat them with an electric mixer until stiff peaks form. Once that happens, slowly beat in the hot syrup. Continue to beat until the mixture is well combined.
Gently fold in the vanilla and confectioners’ sugar until well combined using a rubber spatula. Drop tablespoonful amounts on a baking sheet and bake in the center of the oven for about 25 minutes, or until they turn a light golden brown.
