This aromatic chicken is marinated with lemon and olive oil and then cooked with onions, tomatoes, and raisins. It’s commonly served throughout Greece whenever these ingredients are in season.
Greek Style Marinated Chicken Recipe Ingredients:
- 1 recipe ladolemono
- 1, 4 pound chicken – cut into pieces
- 2 bay leaves
- 1 sprig fresh rosemary
- 3 tablespoons Greek olive oil
- 1 pound tiny boiling onions, peeled
- 1/4 cup red wine vinegar
- 1 teaspoon honey mixed with 1 tablespoon hot water
- 1 cup canned, diced tomatoes, juices drained
- 1/4 cup raisins, soaked in 2 tablespoons hot water
- 1/4 cup fresh, chopped parsley
How to Make Greek Style Marinated Chicken:
Prepare the marinade according to the recipe instructions.
Brush the chicken on all sides with the marinade. Arrange the chicken in a single layer in a dish. Add the bay leaves and rosemary and then pour the rest of the marinade over the top.
Cover the bowl with plastic wrap and place it in the refrigerator for at least two hours, but overnight is best.
Drizzle the olive oil into a deep, heavy skillet. Set the heat to medium and add the chicken (including the marinade and herbs), onions, vinegar, honey, tomatoes, and raisins.
Cover the skillet and cook until the juices in the pan come to a boil. Reduce the heat low and simmer until the mixture is cooked all the way through. This should take about 45 minutes. Sprinkle the chicken with parsley just before serving.
