This recipe calls for Swiss chard, but feel free to substitute spinach instead.

 

Greek Style Lemon Chickpeas With Chard Ingredients:

  • 6 cups cooked chickpeas (canned is fine)
  • 1 cup Greek olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 3 garlic cloves, chopped
  • 1 1/2 pounds chopped Swiss chard, cleaned
  • 1/3 cup lemon juice
  • 1 cup chopped, fresh herbs such as dill or parsley
  • Salt, to taste
  • Pepper, to taste

Instructions to Prepare Greek Chickpeas With Chard:

Preheat the oven to 375 degrees Fahrenheit.

Drain the chickpeas through a strainer and rinse with cold water. Set aside.

Pour the olive oil into a deep skillet and set the heat to medium. Add the onion and saute for 2-3 minutes or until the onions just begin to soften. Stir in the carrots and garlic and saute for another two minutes. Stir in the Swiss chard and saute until the chard is soft. Stir in the chickpeas, lemon juice, and dill or parsley and cook for one minute. Add salt and pepper to taste.

Transfer the mixture to a baking dish that has been sprayed with cooking spray. Place in the center of the oven and bake for 20 minutes. You can serve this dish hot or cold.
