Green beans are commonly grown throughout Greece. When they’re fresh and in season, a version of this recipe is a popular choice.
Fassolakia Freska Recipe Ingredients:
- 1/2 cup Greek olive oil
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 2 medium potatoes, peeled and cut in wedges
- 2 carrots, peeled and chopped into 1-inch pieces
- 2 tablespoons tomato paste
- 1 can diced tomatoes (14.5 ounces)
- 1 1/2 cups warm water
- 2 pounds fresh green beans, ends trimmed
- 1 tablespoon chopped, fresh parsley
- Salt, to taste
- Pepper, to taste
- 1/2 cup feta cheese
Instructions to Make Greek Green Beans:
Pour the olive oil into a deep skillet and set the heat to medium. Add the onions and saute until soft, about five minutes. Add the garlic and saute for another minute. Stir in the potatoes and carrots and cook for about a minute. Add the tomato paste and stir vigorously until it is dissolved.
Stir in the canned tomatoes, water, and green beans. Set the heat to medium-high, cover the skillet, and bring the mixture to a boil. Lower the heat to a simmer and cook until the beans are tender. This should take about 30 minutes. Season with parsley, salt, and pepper in the last ten minutes of cooking. Top with feta cheese just before serving.
