This garlic mayonnaise as a Greek twist with the addition of the Greek yogurt. It is used in Greek to accompany seafood, poultry, and vegetable dishes. It can also be used as a dip for vegetables or bread.

Greek Style Garlic Mayonnaise (Mayonaiza) Recipe Ingredients:

  • 2 cloves garlic
  • 1/2 cup Greek olive oil
  • 2 large egg yolks
  • 1/2 teaspoon ground mustard
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons plain Greek yogurt

Instructions on How to Prepare Greek Style Garlic Mayonnaise:

Add the garlic to a mortar and pestle and pour in the olive oil. Crush the garlic with the olive oil to disperse the garlic flavor. Remove the garlic pieces and set the oil aside.

Place the egg yolks and mustard together in a glass bowl. Whisk together for one minute until the yolks become a pale yellow color. Add half of the olive oil in a thin stream while continuing to whisk.

Pause to slowly whisk in the lemon juice, and then slowly whisk in the rest of the olive oil. Season with salt and pepper. Stir in the Greek yogurt just before serving.
