Terrines are a type of seafood dish that are commonly prepared throughout the Greek islands. This version uses white fish such as cod or haddock and is perfumed with orange, saffron, and aromatic spices like cinnamon and cloves.
Greek Style Fish Terrine Recipe Ingredients:
- 1/4 cup Greek olive oil
- 1 medium onion, chopped
- 2 cups dry white wine, divided
- 1 1/2 cups fish stock or clam juice
- Pepper, to taste
- 1 cinnamon stick
- 2 bay leaves
- 1/4 teaspoon ground cloves
- 1/2 teaspoon saffron threads
- 1 cup orange juice
- 1/4 cup lemon juice
- 2 pounds firm white fish such as haddock, cod, etc, cleaned
- 3 tablespoons fresh, chopped parsley
How to Make a Greek Style Fish Terrine:
Drizzle the olive oil into a deep skillet and set the heat to medium. Add the olive oil and heat for one minute. Add the onions and saute them until soft. This should take about five minutes. Stir in 1 cup of the wine along with the pepper, cinnamon stick, bay leaves, cloves, and saffron. Set the heat to low and cover the skillet. Simmer the mixture for about 15 minutes.
Remove the cover from the skillet and stir in the orange juice, lemon juice, and the rest of the wine. Add the fish and spoon some of the liquid over the fish. Cover and simmer on low until the fish is cooked all the way through. Spoon the liquid over the fish just before serving and sprinkle the fish with fresh parsley as a garnish.
