In Greece, there are several main ways for preparing fish, and this is one of the most popular, especially where there are a lot of grapevines. This dish is traditionally prepared in Greece with the heads on. You’re welcome to do that if you can find fish that way.
Greek Style Fish Baked in Grape Leaves (Psari Fournou me Ambelofia) Recipe Ingredients:
- 1 1/2 pounds fresh fish, cleaned and cut into filets
- 1/4 cup Greek olive oil
- 2 tablespoons lemon juice
- 1 tablespoon chopped, fresh parsley
- 1 tablespoon chopped, fresh thyme
- 1 tablespoon chopped, fresh dill
- Salt and Pepper, to taste
- Large grape leaves, enough to cover all the fresh fish (about 10-20 leaves)
Instructions to Bake Greek Fish in Grape Leaves:
Preheat oven to 350 degrees Fahrenheit. Spray a 9 x 13 baking dish with cooking spray and set aside.
Whisk together the olive oil, lemon juice, parsley, thyme, dill, salt, and pepper.
Arrange the fish filets skin side down onto a large plate. Brush the fish with the marinade using a cooking brush. Reserve any that is leftover. Wrap each fish all the way around with grape leaves and place in a single layer into the baking dish. Drizzle any leftover marinade over the fish.
Place the dish in the center of the preheated oven and bake until cooked all the way through. This should take around 30 minutes.
