This dish is usually prepared in Greece with the fish kept whole. However, outside of Greece, it is difficult to find fish this way. If you can’t, feel free to substitute fish filets.
Greek Style Baked Fish with Garlic and Vinegar (Psari sto Fourno me Xithi) Recipe Ingredients:
- 3 pounds whole, cleaned white fish, such as cod, swordfish, or scrod
- Coarse salt, to taste
- Black pepper, to taste
- Bay leaves, one for each fish
- 1/2 cup red wine vinegar
- 1 cup Greek olive oil
- 6 garlic cloves
- 4 tablespoons fresh, chopped Greek oregano
How to Prepare Greek Fish With Oil and Vinegar:
Preheat the oven to 350 degrees Fahrenheit. Spray a 9 x 13 baking dish with cooking spray.
Make sure the fish is able to be stuffed. Have the fish monger cut a slit down one of the sides of the fish. If you can’t find whole, cleaned fish, use 3 pounds of whitefish filets.
Rub the skin of the fish with the sea salt and sprinkle with black pepper. Place one bay leaf inside each of the whole fish. Place fish in the baking dish.
Add the vinegar, olive oil, garlic, and oregano to a food processor. Pulse until well combined. Pour some of the mixture inside each of the whole fish. Pour the rest of the dressing over the fish.
Place the dish in the center of the oven. Bake until cooked all the way through. This should take about 30 minutes.
