Greek Style Fig Custard (Freska Sika Afrothi) Recipe Ingredients:

  • 1 recipe fig marmalade
  • 1/3 cup water
  • 8 tablespoons unsalted butter, divided
  • 3 tablespoons all-purpose flour
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon granulated sugar
  • 4 large eggs, separated

Instructions on How to Make Fig Custard:

Prepare the fig marmalade according to the recipe instructions. Transfer the marmalade to a food processor or blender with the water. Pulse until smooth. Set aside.

Place 4 tablespoons of the butter into a medium saucepan and melt over low heat. Stir in the flour and cook for 1-2 minutes or until a paste is formed. Raise the heat to medium low and vigorously whisk in the milk. Add the vanilla extract and sugar and whisk. Heat, stirring often, until the mixture is just about to boil.

Remove from the heat and let cool for about on minute. Add the fig marmalade and whisk until smooth and then add the egg yokes. Continue to whisk until the entire mixture is smooth. Meanwhile, beat the egg whites in a medium bowl with an electric mixer until stiff peaks form. Slowly fold the egg whites into the custard mixture.

Preheat the oven to 350 degrees Fahrenheit. Grease a 6-cup souffle pan with butter. Pour the custard mixture into the pan. Bake until the mixture is set. This should take about thirty minutes. Remove from heat and serve after the custard cools.
