This cucumber salad is served in some form all over Greece when cucumbers are in season. It is light and refreshing and tastes great with the vinegar and honey dressing.
Greek Cucumber Salad with Vinegar and Honey Dressing (Angouri Salata) Recipe Ingredients:
- 2 large English cucumbers, cut into bite-sized pieces
- 1 small white onion, sliced
- 4 tablespoons Greek olive oil
- 1/2 cup red wine vinegar
- 4 tablespoons Greek honey
- Salt, to taste
- Pepper, to taste
- 1/2 cup fresh, chopped parsley
- 24 Kalamata olives
Instructions to Make Greek Cucumber Salad:
Place the cucumber chunks into a serving bowl. Toss in the onions and set aside.
Add the olive oil, red wine vinegar, honey, salt, and pepper to a food processor and blend until smooth.
Pour the dressing over the cucumbers and gently toss in the parsley. Toss the Kalamata olives into the salad and serve immediately.
