Cumin is a popular spice on the island of Crete and is used in a lot of dishes. This bread is typical of the country breads found throughout Greece. Follow the recipe exactly as listed or use whichever whole grain flour that you have on hand to substitute.
Cretan Country Bread Recipe Ingredients:
- 1 recipe Greek country bread
- 1 tablespoon cumin seeds
- 1 egg plus 1 tablespoon water, scrambled
How to Prepare Greek Country Bread:
Prepare the country bread according to the recipe. However, just before adding the flour, add the cumin.
Let the dough rise according to the instructions in the recipe. Punch down the dough and form into loaves according to the recipe. Place on a greased baking sheet.
When ready to bake the bread, preheat the oven to 375 degrees Fahrenheit. Brush the loaves with the egg and place in the center of the oven. Bake until cooked all the way through. This should take 30-40 minutes. Test the loaf to make sure it is done by knocking on it. If it sounds hollow, as if you were knocking on the door, the bread is done baking. Remove from the oven and let rest on cooling racks for about 10 minutes before cutting into it.
