This delicious cake is typical of something you may find in Athens. It gets its flavor mostly from orange juice and has a nice crunch from the walnuts.
Greek Style Cake from Athens (Tourta Athineiki) Recipe Ingredients:
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 sticks unsalted butter
- 2 cups granulatd sugar
- 4 large eggs
- Juice of 1 medium orange
- 1 cup chopped walnuts
- Confectioners’ sugar, for dusting
How to Bake the Athenian Cake:
Preheat the oven to 350 degrees Fahrenheit. Spray a 9 x 9 cake pan with cooking spray and set aside.
Whisk the all-purpose flour, baking powder, and salt together in a large bowl. Set aside.
Cut the butter into small pieces and soften to room temperature. Add the butter and granulated sugar to a large mixing bowl and beat on medium speed until well combined. Add the eggs and orange juice and beat on medium speed until smooth and creamy.
Beat the flour mixture into the wet ingredients on low speed in small batches until a smooth batter forms. Turn off the mixer and stir in the walnuts. Pour the batter into the cake pan and place in the center of the oven. Bake for about 40 minutes, or until a toothpick inserted in the center comes out clean.
