Recipe for Greek Style Baked Cod with Tomato Sauce (Bakaliaros Plaki) Recipe Ingredients:
- 2 pounds fresh or frozen cod filets
- Salt, to taste
- Pepper, to taste
- 1/3 cup olive oil
- 2 medium onions, chopped
- 1 recipe Greek tomato sauce
- 3 tablespoons fresh, chopped parsley
Instructions on How to Prepare Greek Baked Code With Tomatoes:
Preheat the oven to 350 degrees Fahrenheit. Brush a large baking dish with olive oil.
Place the cod skin-side down on the baking dish in a single layer. (Choose a large enough dish for the fish, or use more than on baking dish if you have to). Sprinkle with salt and pepper and then drizzle with olive oil.
Distribute the onions evenly across the tops of the fish filets. Do the same with the tomato sauce. Sprinkle the fish evenly with parsley.
Place the baking dish (or dishes) in the center of the oven and bake until the fish is cooked all the way through. This should take about 30-40 minutes.
