Chickpeas are popular in Greek cooking and can be found in dishes made throughout Greece. Serve this is a side dish or as the main course for a simple meal

Greek Style Baked Chickpeas (Revithia sto Fourno) Recipe Ingredients:

  • 2 cups chopped onions
  • 1/2 cup plus 2 tablespoons Greek olive oil
  • 4, 15 ounce cans chickpeas
  • 1 tablespoon fresh, chopped rosemary
  • 2 teaspoons salt
  • 1 teaspoon black pepper

How to make Greek Baked Chickpeas:

Drain the canned chickpeas using a sieve that has been placed on top of a bowl so that you can reserve the liquid. Remove the sieve from the bowl and rinse the chickpeas under cold water.

Add 2 tablespoons of the olive oil to a skillet and set the heat to medium. Let the oil heat for about a minute and then saute the onions over medium heat until soft and translucent.

Preheat oven to 300 degrees Fahrenheit.

Transfer the onions to a casserole dish and add the chickpeas. Sprinkle the rosemary, salt, and pepper over the chickpeas. Add the remaining olive oil plus the reserved liquid from the cans.

Cover the dish loosely with aluminum foil and bake for two hours. After two hours, raise the heat to 350 and bake for an additional 30 minutes. Remove from the oven and let cool for ten minutes before serving.
