This simple recipe is finished with a simple avgolemono sauce and is made all over Greece when asparagus are in season.
Greek Style Asparagus (Sparangia me Patates ke Avgolemono) Recipe Ingredients:
- 1 1/2 pounds potatoes, peeled and cut into wedges
- 1 1/2 pounds asparagus, ends trimmed
- Olive oil, for drizzling
- Salt, to taste
- Pepper, to taste
- 1 recipe avgolemono, made with vegetable broth
- 2 tablespoons fresh, chopped parsley
How to Make Greek Asparagus:
Preheat the oven to 350 degrees Fahrenheit. Spray 2 9 x 13 pans with cooking spray.
Arrange the potatoes in a single layer in one of the dishes. Do the same with the asparagus. Drizzle both with olive oil and then sprinkle with salt and pepper.
Add the potatoes into the oven and cook for thirty minutes. Add the baking dish with the asparagus and cook for twenty minutes more. Remove the asparagus from the oven and test the potatoes. Keep cooking until soft.
Arrange both onto a serving platter and finish off with the avgolemono sauce. Sprinkle with the parsley just before serving.
