Variations of this recipe can be found all over Greece and it is typically cooked whenever artichokes are in season. This particular version is particular version is especially popular in the region of Mani.

Greek Style Artichokes and Rice (Aginares me Rizi) Recipe Ingredients:

  • 2 tablespoons Greek olive oil
  • 1 onion, chopped
  • 1, 9 ounce package frozen artichoke hearts
  • 1/4 cup lemon juice
  • 2 cups chicken stock
  • 1 cup uncooked rice
  • 1 tablespoons fresh, chopped dill
  • 2 tablespoons fresh, chopped parsley

Instructions to Make Greek Artichokes and Rice:

Drizzle the olive oil into a large saucepan and set the heat to medium. Let the oil warm for about a minute. Add the onions and saute until soft. This should take about five minutes.

Stir in the artichoke hearts and saute for about three minutes. Stir in the lemon juice, chicken stock, and rice. Cover and bring to a boil. Set the heat to low once it boils and simmer until all the liquid is absorbed. This should take about twenty minutes. Stir in the dill and parsley just before serving.
