Recipe for Greek Style Artichokes with Lamb Chops

Artichokes grow abundantly throughout Greece, which means the they make their way in a variety of recipe. This recipe pairs them with either lamb chops or pork chops.

Greek Style Artichokes with Lamb Chops Recipe Ingredients:

  • 1/2 cup Greek olive oil
  • 2 1/2 pounds lamb or pork chops
  • 1 large onion, chopped
  • 1 1/2 cups chicken stock
  • 2 lemons, halved
  • 8 medium-sized artichokes, cleaned (snap off the small leaves at the base, cut off the top of the stem)
  • 1/4 cup lemon juice
  • 1 1/2 cups fresh, chopped dill or parsley
  • Salt, to taste
  • Pepper, to taste

How to Make Greek Lamb Chops and Artichokes:

 

Pour the oil into a deep skillet and set the heat to medium. Saute the chops in batches so that both sides are browned. This should take about 2-3 minutes per side. Remove the meat and set it aside.

Add the onions to the skillet and saute them until soft. This should take about five minutes. Add the chops back in the pot. Add the chicken stock and scrape the bottom of the pan with a wooden spoon. Bring the mixture to a boil and then set the heat to low. Simmer the mixture with the skillet uncovered for 30 minutes.

While it simmers, pour cold water into a large bowl. Squeeze the juice from the two lemons in the bowl and add the artichokes. Let the artichokes soak for at least ten minutes. Remove the artichokes from the bowl and add to the skillet with the meat. Add the lemon juice, dill or parsley, salt, and pepper.. Cover the skillet and simmer the mixture for 30 minutes or until the artichokes are tender.
