Recipe for Greek Style Artichokes with Caviar

This dish is made with artichokes, which are found all over Greece. Taramara, or Greek-style caviar, provides the seasoning. It is served throughout Greece, whenever tarama is available and if artichokes are in season.

Greek Style Artichokes with Caviar (Aginares Tamara) Recipe Ingredients:

  • 6 small artichokes, cleaned and trimmed (remove small leaves at base, cut about 1/2 inch of the stem)
  • 1 recipe ladolemono
  • 1 tablespoon grated, fresh onion
  • 2 ounces caviar, Greek tarama is best

How to Prepare Greek Artichokes With Caviar:

Place the artichokes in a large pot with the stems up. Fill the pot 1/4 full with water and cover it. Bring to a boil over medium heat, and then simmer it on low for an additional 15 minutes after that.

Remove the artichokes from the pot and run them under cold water for a minute to lower the temperature. Drain the cooking water and place the artichokes back in the pot. Refrigerate for at least one hour. Remove from the refrigerator and cut each artichoke in half lengthwise. Using a spoon, scrape out the choke.

Prepare the ladolemono is directed in the recipe. Stir in the fresh onion pulp and set mixture aside. Spoon the caviar evenly into the choke of each of the artichokes. Pour the ladolemono and onion over each of the artichoke halves. Let the marinade set for at least an hour before serving.
